1 clove Garlic
1 lb Swiss Cheese, shredded
3 T Flour
1/2 tsp Salt
1/8 tsp Pepper
dash Nutmeg
2 C Chablis, Riesling or other dry white dinner wine
1 loaf French bread, cut in bite-size pieces with crust
3 T Brandy or Kirsch, optional

Rub Fondue pot with garlic. Pour in wine. Place over very low heat until air bubbles rise to surface. Do NOT boil. Coat cheese with flour. Stir wine, adding cheese by handfuls; completely melt each handful before adding the next. Keep stirring until mixture starts bubbling lightly. Add salt, pepper and nutmeg. Stir in brandy; place on table heating element. Guests should spear a piece of bread with a fork and dunk in the fondue with a stirring motion.
