1 lb Chicken Breasts
Oil for frying
1 Egg
3/4 C Milk
3/4 C All Purpose Flour
1 tsp Sugar
3/4 tsp Baking Powder
1/4 tsp Salt
pinch Cayenne

Directions:
Directions:
Cut chicken into 1 by 2 inch pieces. Pour oil 1 inch deep into a medium saucepan. Heat oil to 365. Beat egg with milk in small bowl. Combine flour, sugar, baking powder, salt and cayenne in a medium bowl. Gradually stir milk mixture into flour mixture. Beat until smooth. Dip chicken pieces into batter. Fry in hot oil until golden brown on each side. Drain on paper towels. Serve with hot mustard and/or sweet sour sauce.

This recipe was a regular attendee on the Schlais Family Christmas menu. Our tradition was to make hor devours all afternoon on the day of our Christmas. Then, once the sun set, we'd all get a plate of food and sit in the living room. Once the food was gone, we'd all get a round of gifts. Once the gifts were opened, we'd get another round of food and so on until all the gifts were opened and our bellies were stuffed. Depending on the menu for the day, our Christmas could last up to 12 hours or more.
