8 manicotti shells
4 oz grated parmesan cheese
3 cloves garlic - minced
8 oz tub Ricotta cheese
48 oz. fresh Italian bulk sausage
1 heaping tablespoon freshly snipped flat-leaf parsley
1 qt. Prego 5 cheese spaghetti sauce
1/8 tsp cayenne papper
16 oz. mozzarella cheese - shredded

Cook the manicotti according to package directions. Be careful not to over cook. In a large non stick frying pan thoroughly cook the sausage, breaking it into small bite-size pieces - Drain. In a mixing bowl, whisk together the sausage, Ricotti, parmesan cheese, garlic, cayenne pepper, and parsley. Stuff each manicotti shell with the mixture and place in a non stick baking dish (9x13). Pour the tomato sauce over the manicotti and top with the mozzarella cheese. Bake in 9x13 pan at 350 for 45 minutes or until the cheese is bubbly.
