2 Lg. sweet onions, 1 egg, 2/3 C water, 1 tbsp. vegetable oil, 1 tsp. lemon juice, 1 c all-purpose flour, 1 1/2 tsp. baking powder, 1 to 1/4 tsp salt, 1/8 to 1/4 tsp cayenne pepper, Oil for deep-fat frying.

Cut onions into 1/2-in.slices, separated into rings. Place in bowl cover with ice water soak for 30 minutes. Meanwhile, in a bowl beat egg, water, oil and lemon juice. Combine flour, baking powder, salt and cayenne; stir into egg mixture until smooth. Drain onion rings; dip into batter. In an electric skillet or deep fat fryer, heat oil to 375. Fry onion rings a few at a time. About 1 to 1 1/2 minutes on each side or until golden brown. Drain on paper towels.
