1/2 c. cold water
1/4 t. salt
7 tbsp. cornstarch
1 1/2 c. hot water
1 1/4 c. sugar
3 egg yolks
1/2 c. lemon juice
grated rind of 1 lemon
1 tbsp. butter or marg.

Directions:
Directions:
Mix cold water, salt, and cornstarch
Combine hot water, sugar in top of double boiler and bring to boil. Add cornstarch mixture and cook until thickened, stirring constantly (10 min.) Beat egg yolks slightly. Stir small amount of hot mixture into yolks, return to double boiler, and cook a few minutes longer. Add lemon juice, rind, and butter and blend. Cool. Pour into baked pie shell. Spread meringue lightly on filling and bake.
