2 cans of whole kernel corn (I use Green Giant) 1 can of cream style corn 1 c. sour cream 1/2 c. melted butter 2 eggs (lightly beaten) 1 pkg. of Jiffy corn muffin mix salt to taste 3/4 c. grated Cheddar cheese
Preheat oven to 350º. Mix all ingredients except for grated cheese and pour into a 2 qt. casserole dish. Cover and bake for 1 hour. Uncover and bake another 1/2 hour - sprinkle w/ grated cheese.
