1 lb. semi-sweet chocolate
4 eggs slightly beaten
1 tbs of sugar
1/2 c. plus 2 tbs. unsalted butter
1 tbs. of flour
1 tsp. of vanilla
8 0z. semi-sweet chocolate, chopped
1 cup cream
Equipment: 9 inch cake pan, parchment paper

Chop chocolate into cubes about pea size. Place chocolate and butter into bowl which you place in a hot water bath to melt chocolate. In a large mixture bowl, beat eggs then add 1tbs. of sugar, continue beating for 8minutes until batter becomes very thick and leaves a pattern when the beaters are removed. Remover mixture from the bowl. Sift 1tbs. of flour over cake batter, fold flour into egg mixture carefully. Fold into egg mixture, a small amount of cool melted chocolate. Mix well and add the remaining chocolate. DO NOT beat but fold chocolate into egg mixture without breaking down the air pockets which have been beaten into the egg whites. Next, pour the batter carefully into the prepared pan. (Pan has buttered sides and line the bottom with wax or parchment paper. Preheat the oven to 425 . Bake for 15minutes and remove the cake from the pan when it's warm. Remove parchment paper and cool completely on a rack. Prepare the glaze: Combine the Melted 80z. chocolate and 1 cup cream. Mix well. Pour in the center of cake and spread over the top and sides.
