1/2 c cake flour
1 tsp salt
1 tsp black pepper
1 tsp oregano
1/2 c butter
4 boneless, skinless chicken breasts, pounded 1/8 inch thick and cut into serving-size pieces
2 c sliced mushrooms
1 c marsala wine

Directions:
Directions:
Combine flour, salt, pepper, and oregano in a shallow dish. Heat butter in skillet. Dredge chicken in flour mixture. Brown in skillet on both sides. Remove and keep warm. Saute mushrooms in pan. Deglaze pan with marsala wine. Return chicken to skillet and simmer about 4 minutes.

Serve with salad and pan-roasted potatoes or penne pasta.

This is a delicious and simple meal to serve to guests. It re-heats well too.

This recipe is supposed to duplicate a dish served at Olive Garden. The newspaper article suggests adding a splash of cream to the sauce before adding the chicken back in, or topping the whole thing with grated mozzarella and covering the pan to melt it.
