1 C oil
2 C sugar
4 eggs
6 ripe bananas, mashed (from frozen)
4 C flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1/4 C milk
1 tsp vanilla
1 C chopped nuts

Heat oven to 350
Grease and flour 3 lg or 4 small loaf pans
You can do cupcakes or tube pan
Beat oil and sugar together. Add eggs and banana pulp and beat well. Add dry ingredients, milk and vanilla. Mix well and stir in nuts. Pour in loaf pans; bake about 1 hour; cool well on rack.

Personal Notes:
Put your old, over ripe bananas in the freezer and use them for the nut bread. The freezing intensifies the banana flavor! When freezing bananas, either peal and bag or do as I do...just throw them in the freezer.
