1 lb prosciutto
.4 lb salami
1/4 lb sandwich pepperoni
2 sausage links, cooked and crumbled
8 oz goat cheese
1/4 lb American cheese
2 handfuls Parmesan cheese
2 dozen eggs
pepper, to taste
2 9" pie shells

Directions:
Directions:
Dice each of the meats into approximately 1/2" pieces. Do the same with the goat cheese and American cheese.

In a mixing bowl, beat the 2 dozen eggs for 2-3 minutes to ensure they are scrambled well. Add all the remaining ingredients (except the pie shells)to the bowl and mix by hand to incorporate.

Divide evenly into the 2 pie shells. Bake at 350 for 40 minutes, checking after 30 minutes for doneness. Pies are done when the middle of the pie seems solid when the plate is shaken. (Kind of like a quiche.)

Note: The recipe that this came from is the one Mom and I use to make 8 pies at Easter. Thus, some of the ingredients did not divide evenly. That is why I said .4 lb of salami, as the original recipe calls for 1 1/2 lbs of salami (for 8 pies).
