1 C flour
1 C cornmeal
4 tsp baking powder
1 tsp salt
1/4 C sugar
1-1/2 C grated cheese
1 C milk
1 C creamed corn
1/4 C oil
2 Eggs
1/4 C chopped canned jalapeņo

Directions:
Directions:
Preheat oven to 425.
Put some oil ( about 1/4 C) in a cast iron skillet and put the skillet in oven to get really hot.
Mix all the ingredients together, pour in hot skillet and bake about 30 minutes or until toothpick comes out clean.

This is a good old standby. It can be doubled easily and cooked in two skillets. In fact, you better double it as there is never enough for third helpings.
