1/2 c. margarine
1/2 c. peanut butter
1/2 c. brown sugar
1/4 c. sugar
1 egg
1-2/3 c. flour
1 tsp. soda
1 tsp. salt
1 egg white
1 T. water
1 c. finely chopped unsalted peanuts or crushed Cornflakes
1 pkg (9 oz.) peanut butter cups (37 cups)

Cream butter, peanut butter, brown sugar, sugar and egg. Combine flour, soda and salt; add to creamed mixture. Roll dough into 1" balls. Combine egg white and water; beat with fork until foamy. Roll balls in egg white mixture then in chopped peanuts. Place on ungreased cookie sheet and press with thumb in center making a depression about 1" wide. Bake at 375 for 8-10 min. Cool on cookie sheet for 1 minute. Unwrap peanut butter cups; place in center of each warm cookie pressing down slightly.
