1 c. Butter flavor Crisco
1 c. crunchy peanut butter
3/4 c. sugar
3/4 c. brown sugar
2 eggs, beaten
1-1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1-3/4 c. quick oats (not instant or old fashioned)
1-1/4 c. raisins
1 medium Granny Smith apply, finely grated, including juice
1/3 c. finely grated carrot
1/4 c. flake coconut (optional)

Directions:
Directions:
Combine Crisco, peanut butter, sugars in large bowl. Beat at medium speed until blended. Beat in eggs, flour, baking powder, soda and cinnamon. Add gradually to creamed mixture at low speed. Beat until blended. Stir in oats, raisins, apple, carrot and coconut (if used) with spoon. Drop onto ungreased baking sheets at 350. Makes 5-6 dozen.
