A family favorite.
6 skinless, boneless chicken breasts grilled or baked and cut into pieces
3 cups cooked white rice
2 pounds broccoli florets lightly steamed
1 diced onion
1 diced bell pepper
6 tablespoons butter
1 can cream of chicken soup (family size)
˝ cup mayonnaise
1 ˝ cups grated cheddar cheese (optional)

4 tablespoons butter
1 cup cornflake crumbs

Preheat oven to 350 degrees F.
Sauté onion and bell pepper in butter until transparent but not browned.
Combine cream of chicken soup and mayonnaise in large mixing bowl and mix until well blended. Add rice, chicken, and onion/bell pepper mixture and mix together. Carefully fold in broccoli and cheese.
Pour mixture into 9x13 baking dish,
Melt butter for topping add cornflake crumbs and mix. Spread topping on casserole.
Bake for 45 minutes.
