1 c. cooking oil
2 c. sugar
3 well beaten eggs
2 c. shredded carrots
1 (13 oz.) can crushed pineapple (do not drain)
3 c. flour
1 t. cinnamon
1 t. salt
1 t. soda
2 t. vanilla
1 c. chopped nuts
1 c. raisins

1 (8 oz.) pkg. cream cheese
1/2 stick margarine
2 t. vanilla
1 box powdered sugar

Mix oil and sugar together. Add eggs, carrots, and pineapple. Mix in dry ingredients and blend well. Add vanilla, nuts, and raisins. Bake about 35 to 40 min. at 350.

Icing: Beat all together. Ice cake and add chopped nuts or coconut.
