2-3 slices bacon
4 large ripe tomatoes
1 lb Penne noodles
1 tbs olive oil
2 green onions (chopped)
2 tbs fresh basil (chopped)
1 tbs fresh oregano (chopped)
2 cloves garlic (minced)
1 1/4 C cream

Directions:
Directions:
Cut the bacon into small pieces. Cut a small cross on the base of each tomato, place in boiling water for 1-2 minutes and plunge into cold water. Peel the skin off the tomato, starting at the cross. Cut the tomatoes in half and scoop out the seeds. Finely chop the tomatoes.

Cook the Pasta as directed.

While the pasta is cooking heat the oil in a saute pan. Cook the bacon and onion over med heat, stirring occasionally, for 5 minutes. Add basil, oregano, garlic, cream, and salt & pepper to taste. Simmer for 5 minutes. Add tomato and cook for 2-3 minutes or until heated through. Serve over warm pasta.

We used penne pasta with flax seed from Trader Joe's on this recipe and it turned out really well. There is a lot of preparation on this recipe but it was worth it. The ripeness of the tomatoes is crucial for this recipe to turn out well.
