Ingredients:  
Stir together 1-1/2 c. flour
1 c. sugar
tsp. cinnamon
Stir in 2 eggs
c. oil
1 c. finely shredded carrots
8 oz. can crushed pineapple
1 tsp. vanilla

Directions:
Directions:
Spoon into greased muffin cups and bake 350 for 20 minutes.

For frosting beat together 3 oz. softened cream cheese, 1-1/2 c. xxxx sugar and 3 T. softened butter. Makes 12.
