12 oz. Farfalle
4 tbs butter
1 tbs olive oil
1 onion (chopped)
2 cloves garlic (crushed)
4 oz. button mushrooms (sliced)
1 C cream
12-14 oz. canned tuna (drained and flaked)
1 tbs lemon juice
1 tbs fresh parsley (chopped)

Directions:

Cook pasta as directed.

While the pasta is cooking, heat butter and oil in a large saute pan until butter is melted. Add onion and garlic and stir over low heat until onion is tender. Add mushrooms and cook for 2 minutes. Pour in the cream and bring to boil. Reduce heat and simmer until sauce begins to thicken.

Add tuna, lemon juice, parsley, and salt & pepper to taste. Heat gently, stirring constantly. Toss with pasta and serve.

This is a nice variation on tuna noodle casserole. You can use canned salmon instead of tuna if desired. Try topping with Parmesan cheese.
