1-1/2 cups chicken broth or water 1 can coconut milk (14-oz) 2 teaspoons sugar 1 teaspoon kosher salt 1/4 teaspoon red pepper flakes 1-1/4 cups basmati or other long grain rice 1 tablespoon fresh lime juice
Bring broth, coconut milk, sugar, salt and pepper flakes to a boil in a saucepan. Stir in rice, boil 30 seconds, cover and reduce heat to low. Cook 15 minutes or until rice is tender and liquids have been absorbed. Fluff with a fork. Finish with lime juice.
