15 oz. black beans
15 oz. pinto beans
15 oz. black eyed peas
15 oz. white sweet corn
1 small jar pimentos
1 green pepper
1 red pepper
bunch of green onions (1/2 cup chopped)
1 cup olive oil
1/2 cup sugar
1/2 cup red wine vinegar

Directions:
Directions:
Drain the beans, corn and pimentos. Put it a large bowl. Chop the peppers, celery, and onions and add to bowl. Boil the oil, sugar and vinegar and let cool completely. Add the cooled dressing and refrigerate for 12 - 24 hours. Drain a little bit before serving. Serve with Tortilla chips.
