3 tablespoons rosemary
2 tablespoons marijoram
8 cloves garlic, minced
4 teaspoons sage
4 teaspoons oil
2 teaspoons salt
2 teaspoons pepper
1 boneless whole pork loin roast (3 lbs)
4 lbs red potatoes, quartered

Directions:
Directions:
In bowl, combine rosemary, marjoram, garlic, sage & 3 teaspoons oil, salt and pepper. Rub roast with 2 tablespoons of mixture.

In dutch oven, brown roast in remaining oil on all sides. Place in roasting pan coating with cooking spray. Toss potatoes with rest of herb mixture; arrange around roast.

Cover and bake at 350 for 1 1/2 - 2 hours.

Let stand 10 minutes before slicing.
