8 oz. cheese tortellini
3 Roma tomatoes
1 zucchini
1 small yellow squash
2 C fresh spinach
2 cloves garlic
2 Tbs. oil
1/2 lb. bacon, diced, cooked, and drained
salt and pepper to taste
Parmesan cheese

Directions:
Directions:
Cook tortellini as directed. While the tortellini are cooking, slice zucchini, squash, and tomatoes. Saute zucchini, squash, and crushed garlic in oil, in a large skillet until tender. Add bacon, tomatoes and spinach and continue to cook until tomatoes are warm and spinach is wilted. Salt and pepper to taste. Serve over warm tortellini, sprinkled with Parmesan cheese.
