1 1/2 cups rice
2 lbs. fresh coconut - grated *
4 cups water and a little more
1/2 tsp.salt

*or one can do it THE EASY WAY (a sacrilege as far as I am concerned) and buy the canned coconut milk.

In a large pan, place the grated coconut with the 4 cups of water and 1/2 tsp. salt and cook for 10 minutes. Remove from stove. Wait until the coconut mixture is cooled. Pour the cooled coconut mixture through a strainer to drain the coconut liquid. Set aside the first stained coconut milk in a bowl. In a bowl add 2 cups water to the leftover grated coconut and mix and squeeze with your hands.By handfuls squeeze the coconut to remove all liquid and strain this milk also. Add this coconut milk to the first stained milk. Strain once again.**Set aside 2 cups of this combined coconut milk for later. Put the rest of the strained milk back in a heavy pan and boil on a low flame until the liquid boils down until it becomes only coconut oil it will be a brown color. The boiling down can take up to 2 hours. Add the rice to the coconut oil and stir for about 2-3 minutes to toast. Add the 1 cup of coconut milk to the rice and cook on a low flame until the liquid is absorbed - the top of the rice should be moist. Cover at this point and cook on a very low flame for another 10 minutes - or until the rice is done.

Another of Isabel's specialties. This coconut rice is RICH RICH RICH - like candy. This recipe is of West Indian origin and is usually served with fish or seafood. However, it goes well with beef, pork, or chicken. Or, just eat it by itself like candy!!!!
