8 eggs 1/3 cups milk 1 cup chopped onion 1 pound frozen hash brown potatoes 1/4 pound margarine 1 package Canadian bacon 1/4 cup chopped green pepper (optional)
Melt margarine in 10 inch skillet, then add hash browns. Separate with a fork and cook 15 to 20 minutes. Beat eggs with milk, then add onion and green pepper. Pour over potatoes and add bacon on top. Cook at least 20 minutes over low heat. Slice as a pie.
