2 c whole almonds (blanched)
2 tsp extra-virgin olive oil
2 tsp ground cumin
1/2 tsp salt
1/4 tsp ground pepper

Directions:
Directions:
Preheat oven to 300. Place the almonds in a baking pan, toss with the oil, cumin, and salt and pepper. Next, bake until the almonds are lightly toasted. This should take about 25 minutes. Let cool on wire rack. Variation: instead of cumin try curry powder and cayenne pepper
The almonds will keep in an air tight container for up to 3 days.
