1 oz dry white wine per person
1 oz dry sherry per person
1/2 clove minced garlic
4 oz Cheddar cheese
4 oz Swiss cheese
4 oz Bleu cheese
1 T flour
Salt and pepper to taste
1 oz heavy cream
2 green onions, diced
Red pepper flakes, freshly ground

Directions:
Directions:
Flour the cheeses and season with a touch of salt and pepper. Add the garlic, wine and sherry to a small saucepan over low heat. Warm to a very low simmer and whisk in the cheeses slowly. Do not add additional cheese until all of the cheese has blended. Add the heavy cream and whisk into the cheese until well blended. Finish with the green onions and red pepper flakes. Add to the fondue pot over low flame.
