6-10 medium potatoes (cooked, peeled while warm, and cut into thick slices)
2 tbsp. olive oil
1-2 cloves garlic, pressed
1 tbsp. balsamic vinegar
2 tbsp. fresh chives
2 tbsp. fresh parsley
1/4 tsp. salt
1/4 tsp. pepper

Prepare potatoes; set aside. Mix dressing. Toss together. Allow to blend 1/2 hour at room temperature.
