1 cup Country Rice Blend from Whole Foods
1 small vidallia onion - chopped
1 stick butter - melted
2 1/4 cups chicken or vegetable broth

Directions:
Directions:
Combine all ingredients in a 7" X 11" pyrex dish and put into a 350 degree oven, uncovered. Cook for one hour, stirring two or three times. Cook until the liquid is absorbed but it is still moist.

Incredible and a breeze! You can add sliced mushrooms if you like, but they must be very fresh. It really doesn't need them.
