3 tbsp. peanut oil, divided
2 eggs, lightly beaten
4 c. cold cooked rice
1/2 c. chopped ham
6 green onions, chopped
1/2 c. chopped, cooked shrimp
8 water chestnuts, chopped
1/2 c. green peas, frozen or fresh
1 c. chopped fresh mushrooms
1/4 c. soy sauce

Directions:
Directions:
Heat 1 tbsp. of the oil in a large skillet. Add beaten eggs, swirl around pan and cook until just set. Place a plate on top and, holding the pan and the plate together, flip them over. Slide the egg back into the pan and cook a few seconds longer on the other side. Remove egg and cool. Roll the egg into a cylinder and slice into thin strips; set aside. Wipe out skillet. Heat remaining 2 tbsp. oil in same skillet and heat rice. Add ham, green onions, shrimp, water chestnuts, peas, mushrooms, and soy sauce. Stir well to combine. Add reserved egg and heat through.
