2 or 3 chopped tomatoes
1 large chopped onion
2-3 cloves minced garlic
1 small can green chilies
Pork roast (1 large or 2 small)
1 large can pinto beans
2 t. chili powder
1/2 t. ground cumin
1/2 t. salt
1/4 t. paprika
1/4 t. oregano
1/4 c. water

Directions:
Directions:
Put tomatoes, onion, garlic and chilies on bottom of crockpot. Place pork over vegetables. Mix seasonings together and rub into pork. Add water. Cover and begin cooking on high for 1 hour, then change to low for 10-12 hours. At about hour 9, drain grease and shred meat with fork. Stir in pinto beans. Serve on warmed tortillas with your favorite garnishes.

I usually have the meat in the crockpot for 2 days… the longer it is in the crockpot, the better! If you don't use all your meat right away, you can freeze the leftovers.
