1 medium onion, chopped
2-3 cloves garlic pressed
1 lb. bulk hot Italian sausage or mild sausage such as Jimmy Dean (I like the mild)
3 cans beef broth
2 cans chopped tomatoes
1 can tomato sauce
1 carrot peeled and sliced
1 medium green pepper chopped
1 zucchini sliced
˝ lb. fresh baby spinach
1 Cup dry red wine (optional)
1 pkg. refrigerator cheese tortellini
2 tbsp each dried basil and oregano
(No salt or pepper needed)

Directions:
Directions:
Sauté onion and garlic in olive oil. Add sausage and brown. Drain fat. Add rest of ingredients except tortellini. Bring to a boil. Reduce hear and simmer for 45 minutes. Add tortellini and cook for length of time on package. Sprinkle with parmesan when serving.
Great with crusty bread and salad.
