1/3 cup chicken broth, reduced sodium
1/4 cup apricot preserves
1/4 cup honey
1 tsp soy sauce, reduced sodium
2 chicken breasts, boneless, skinless
1/4 tsp salt
1/4 tsp black pepper, freshly ground
2 tsp olive oil
1 onion, small, yellow, sliced

Combine chicken broth, apricot preserves, honey and soy sauce in small bowl.

Season chicken with salt and pepper. Heat olive oil in skillet and brown chicken on both sides. Return browned chicken to skillet and add broth mixture. Bring to boil and reduce to simmer for about 12 minutes or until juice from chicken runs clear. Baste chicken occasionally with pan juices.

Pan juices may be thicken with flour or corn starch.
Remove from heat when done.
