1 1/2 lbs ground beef
1 c. tomato juice or tomato sauce
3/4 c. uncooked oats
1 egg or 2 egg whites, lightly beaten
1/4 c. chopped onion
1/2 tsp. salt
1/4 tsp. black pepper

Directions:
Directions:
Heat oven to 350. In lg bowl, combine all ingredients, mixing lightly but thoroughly. Press into an 8x4 inch loaf pan.

Bake 1 hr to medium (160) doneness until not pink in center and juices show no pink color. Let stand 5 minutes. Drain off any juices before slicing.

1/2 c. frozen (thawed) or canned (drained) corn
1/2 c. chopped green or red bell pepper
2 1/2 oz jar sliced mushrooms, drained
1/3 c. parmesan cheese
2 T finely chopped parsley or cilantro
