2 c. fresh zucchini, chopped
1 med. onion, chopped
1 sm pkg ritz crackers
1/4 c. melted butter or margarine
1 c. grated cheese
2 eggs
1/2 c. milk
salt and pepper

Directions:
Directions:
Boil squash and onion until tender. Drain off all liquid. Mash. Beat together eggs and milk in separate bowl. Add to squash. Mix cheese, crackers, and butter or margarine. Add 1/2 to squash mixture. Pour into buttered casserole dish. Sprinkle remaining crumb mixture on top. Bake 20-30 min at 400.
