1 tbsp oil
1 small onion, diced
1 green pepper, diced
1 clove of garlic, minced
1 15 oz can of herbed tomato sauce
1 package of frozen, cooked, shelled and deveined shrimp
2 - 4 cups of cooked rice

Directions:
Directions:
Prepare rice according to package directions. Heat oil in a skillet. Saute the onion, garlic, and green pepper. Add the tomato sauce and simmer 2 minutes. Stir in the frozen shrimp and heat until just heated through and warm, perhaps 2 - 3 minutes. Serve over warm rice. Add a lettuce salad for a complete meal.

This is another fast meal for a busy working mom. If you keep a bag of shrimp in the freezer, you can use this recipe as an "emergency" dinner in case you have an unexpected guest. It appears more elegant and difficult than it really is.
