12 slices Franciscan French or sourdough bread;
2-3 T butter for buttering bread on both sides;
1/2 lb. fresh mushrooms, sliced;
2 C diced yellow onion;
1/2 C. butter (or less) to saute mushrooms & onion
2 rolls regular Jimmy Dean sausage, sautéed & drained;
3/4 lb. sharp cheddar, grated;
5 eggs;
2 1/2 C milk;
1 tsp dry mustard;
3 tsp Dijon mustard;
1 tsp nutmeg;
salt & pepper;
2 T chopped parsley

PREPARE THE DAY AHEAD, refrigerate overnight.
Trim crust from BREAD; butter both sides lightly. Layer tightly in greased 9 x 13 pan. Set aside.
Saute mushrooms and onions till water is dried up; set aside. Saute sausage, drain well & mix with onion & mushroom. Layer over bread. Layer cheese.
LIQUIDS: Mix slightly beaten eggs & milk. Add mustards, nutmeg, salt & pepper. Mix and pour over all & top with parsley. Refrigerate overnight.
Bake at 375 for 45-60 minutes, uncovered. Do not over-brown. Cut in squares & serve hot.
