6 C. zucchini, diced
1/2 C. onion, chopped
1 C. carrots, grated
1 C. sour cream
1 can cream of chicken
1/4 C. margarine
6 oz. Stove Top stuffing (chicken flavor)
1 chicken breast, cooked and cubed (opt)

Directions:
Directions:
Combine diced zucchini, onion and carrots; microwave 2 minutes. Mix sour cream and soup until smooth in a separate bowl. Add to vegetables. Prepare stuffing as directed on package. Place half the stuffing on bottom of baking dish then add the vegetable and soup mixture. Top with remaining stuffing. Bake uncovered at 350 for 25 minutes. May add chicken to veggies and soup if desired.
