12 potatoes, peeled and diced
4 carrots, grated
1 small onion, chopped or 1 Tb. dried onions or more to taste
1/2 C. butter
2 cans cream of mushroom soup
2 C. cheddar cheese, grated; add more to taste
1 can evaporated milk
Milk
Salt and pepper to taste

Directions:
Directions:
Boil potatoes in salted water until soft. Drain and mash a little bit. Grate carrots. If using a chopped onion, put carrots and onion in microwave for 4 minutes cover with plastic wrap to soften. Mix all ingredients, except for cheese. Before serving add cheese. Thin with milk as desired thickness.
