1lb lean turkey
2 - 16oz cans of black beans
4 - 16oz cans of diced tomato
2 - 16oz cans of corn
1 - 16oz black olives (optional)
1 onion, diced
1 green pepper and/or red pepper
8oz mushrooms
1 large taco mix

Directions:
Directions:
In a large fry pan brown turkey, onions, peppers, mushrooms and season to taste.

In large pot on medium heat mix black beans, tomato, corn (do not drain all), olives and taco mix. Let simmer for 10 minutes. Add meat mixture to tomato mix and simmer for additional 20 minutes.
