1/2 C apple cider vinegar;
1/2 C sugar;
1 large can of pineapple chunks;
1 T hoisin sauce;
1/2 tsp dry mustard;
1 med bunch of celery;
1 bunch green onions;
2 med. green peppers;
4 med. cucumbers;
1 can lichee nuts;
1 roast duck (from deli);
browned sesame seeds

Prepare SAUCE: put vinegar, sugar, pineapple juice from the can of chunks, hoisin, mustard and 1/4 c of water in a pan and heat to boiling. Thicken with a mixture of cornstarch (1/2 tsp) and water to thin. Cool sauce.
Prepare GREENS: Slice in med. thin slices the celery, peppers and cucumbers. Julienne the green onions.
ADD to the greens; the lichee nuts, cut in 1/2 or 1/3, the drained can of pineapple chunks, boned and sliced duck meat.
JUST BEFORE SERVING, pour the cooled sauce sparingly over the salad & toss--may not need all the sauce. Serve sprinkled with sesame seeds that have been browned or toasted.
