1 lb Fettuccine
3 oz. butter
1 1/2 cups freshly shredded Parmesan
1 3/4 cream
3 tbsp. fresh parsley
4 oz. fresh spinach (bagged)

Directions:
Directions:
Cook the pasta as directed.

While the pasta is cooking, heat the butter in a medium pan over low heat. Add the Parmesan and 1 1/4 cups of cream and bring to boil stirring constantly. Reduce the heat and simmer for 10 minutes, or until the sauce has thickened slightly.

Add the parsley, spinach and remaining cream. Continue to cook on low heat until the spinach has cooked down. Salt and pepper to taste and serve over pasta.

Fettuccine Alfredo is one of my favorite dishes. This recipe makes an Alfredo that is great even as leftovers. For a slightly different flavor use a mixture of Parmesan, Romano, and Asagio cheeses.
