1 pound sweet and/or hot Italian sausage
1 pound small red potatoes
1 jumbo onion
2 red and/or yellow peppers
1 T. olive oil

Directions:
Directions:
Preheat oven to 450. Cut sausage crosswise in thirds, cut potatoes in half, cut onion in 12 wedges, and cut peppers lengthwise in 8 pieces. In a 15x10 jelly roll pan, combine sausages, potatoes, onion and peppers with olive oil, 1/2 t. salt and 1/4 t. pepper. Toss to coat. Roast mixture 30 to 35 minutes or until potatoes are fork tender and sausages are lightly browned, stirring halfway through roasting.
