2 cups grated raw zucchini, unpeeled
3 eggs
1 3/4 cups sugar
1 cup vegetable oil
3 teaspoons vanilla
2 tablespoons grated orange rind
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
2 teaspoons cinnamon
3/4 cup raisins
1/2 to 3/4 cup finely chopped nuts

Directions:
Directions:
Beat eggs until light and fluffy. Add sugar and continue to beat until blended. Add oil, vanilla, orange rind, and squash. Stir in blended dry ingredients. Bake in two small or one larger bread pan, greased and floured. Bake at 325, 50 to 60 minutes or until done when tester is removed clean.
