1 cup shortening
2 cups granulated sugar
4 large eggs
1/2 tsp baking soda
pinch salt
1 cup buttermilk
3 cups all-purpose flour
1 tsp vanilla extract
Filling:
1 cup granulated sugar
4 level tbsp all-purpose flour
1 cup water
2 egg yolks
juice of 2 lemons
pinch salt
4 tbsp (1/2 stick) butter
1 lemon peel, grated

Directions:
Directions:
Preheat oven to 350. Grease and flour three round cake pans. In a medium mixing bowl, cream shortening and sugar. Add 1 egg at a time, mixing well after each addition. Add baking soda and pinch of salt to buttermilk and stir. Alternately, add part of the flour and part of the buttermilk to the shortening mixture, mixing well after each addition. Add vanilla and stir well. Pour into prepared pans and bake for 30 minutes. Cool 10 minutes on wire racks, then remove from pans and cool completely before filling and frosting with Lemon Cheese Frosting.
Filling:
In a medium saucepan, mix together the sugar and the flour. In a small bowl, mix water, egg yolks and lemon juice. Combine with the dry ingredients. Cook over medium heat until lightly glassy and translucent. Add pinch of salt, butter and grated lemon peel. Let cool.
