2 c. buttermilk
1 c. flour
1 egg, beaten
1 tsp. baking soda
1/2 tsp salt

Directions:
Directions:
Mix together dry ingredient. Add egg and buttermilk. Mix until batter is smooth. Use 1/4 c. batter on hot griddle for each pancake.

This is a very thin, crepe-like pancake batter. Especially good if you use fruit for filling, roll them up and sprinkle with powdered sugar, IHOP style!
