1 medium (2-3 pounds) zucchini, peeled
4 tablespoons grated Parmesan cheese
1 teaspoon Lipton dry onion soup
1/4 teaspoon salt
couple dashes of pepper
several dashes of ground nutmeg
few slices of butter

Directions:
Directions:
Cut zucchini into slices 3/4 inch thick. Remove soft center with seeds and dice the remainder into 3/4 inch cubes. Put into large bowl and mix thoroughly with the rest of the ingredients.

Grease shallow baking dish and fill half way with mixture. Cover with a layer of bread crumbs and few slices of butter. Put remainder of mixture on top and cover with bread crumbs, cheese and butter. Bake 45 minutes to one hour at 350. If contents seem dry, add a little water.
