3 T. butter
2 T. flour
1 c. milk
1 T. Dijon mustard
fresh nutmeg
8 slices good white or wheat bread
16 slices deli ham
8 slices swiss, gruyere, cheddar, or american cheese (whatever is your favorite)

Directions:
Directions:
In medium saucepan, melt 2 T. butter. Sprinkle 2 T. flour over butter and whisk for about 1 minute. Whisk in milk and dijon. Season with a few grates of fresh nutmet, salt and pepper. Take off heat when thickened.
Butter one side of 4 slices of bread and lay, butter-side-down, on griddle. Spread the dijon sauce on bread and top with 2 slices of cheese and 2 slices of ham. Spread more dijon sauce on the second piece of bread and top. Butter top of sandwich and cook all four sandwiches on low until golden brown on both sides and cheese is melted.
You can also spread the dijon sauce on buns with the ham & cheese, wrap them in foil, and bake the buns on a cookie sheet at 350 for 15-20 minutes.

Got this idea from Rachael Ray and have made it several times - it's delicious! She mixed up 2 eggs and dipped the sandwiches in the egg before putting them on the griddle like a monte crisco. Give it a try!
