1 T. olive oil 3 scallions 3 cloves of garlic Pork Tenderloin (2 lbs) 1 T. dijon mustard 1 T. worchester sauce 1 tsp. liquid smoke 1/4 c. chopped fresh cilantro 2 tsp. italian seasoning 1 T. honey Zest and juice of 1 medium orange and 1/2 lime 1 cup chicken stock Salt and pepper to taste Tabasco sauce 2 tsp. (optional)
Rub meat with the mustard, liquid smoke,worchester sauce, tabasco sauce and seasonings. Heat skillet with olive oil, add scallions and garlic tenderizing for 1 minute, add meat and sear on all sides until brown. Add the citric juices and zest, honey and chicken stock. Reduce heat and cover and let simmer for 30 minutes.
