6 chicken breast, boneless, skinless
1 onion,diced
1 red pepper (remove seeds from peppers),diced
1 orange pepper,diced
1 yellow pepper,diced
1 small jalapeņo pepper,diced
2 pkgs taco seasoning
2 cups enchilada sauce
2-3 cups shredded cheese
1 pkg enchilada shells
Sour cream
Salsa

Directions:
Directions:
Cook and shred chicken breast. Saute all vegetables. Add chicken, taco seasoning, enchilada suace and 1/2 cups cheese to vegetable mixture. ill enchilada shells with mixture and place in a 13 x 9 pan. Bake at 350 degrees until heated through. Top with more cheese and bake 5 minutes or until cheese melts. Top with sour cream and salsa.
