3 T. Oil
3-4 Large onions, quartered, then sliced crosswise (4 cups)
1 1/2 t. paprika, preferably sweet
3/4 t. salt
1/4 cumin
Fresh ground pepper to taste
Water (optional)
8 Hot dogs
8 Hot Dog Buns, toasted

Directions:
Directions:
In large heavy skillet, heat oil. Add onions; toss until coated with oil. Add paprika, salt, cumin, and pepper; toss again. Cover and simmer about 25 minutes or until tender but still a little firm, stirring often. DO NOT BROWN. (If mixture becomes dry, add a few tablespoons water.) If cooking outdoors, be sure skillet is over gentle glowing coals, not roaring fire. I grill or cook my hot dogs in a small amount of grease in another skillet until they begin to brown.
